Filled Courgette Flowers

Actually bought the courgette flowers mainly because of their wonderful appearance. I didn’t know that they would taste also very delicious. For the filling you need to have a little bit patience for not breaking the courgette flowers, but in the end it’s really worth it…:-) You will see!

Ingredients (for 4 persons):

  • 12 courgette flowers with zucchini
  • 1 shallot
  • 125 g long grain rice or wild rice
  • 2 tbsp fresh chopped herbs (dill, basil, mint)
  • 2 tbsp olive oil
  • 2 tbsp tomato puree
  • 1 knife tip cumin
  • 1 tsp paprika powder
  • salt & peper
  • chive
  • 250 ml vegetable broth

Remove carefully the pistills of the courgette flowers, wash them and let them drain. Chop the shallot. Wash the rice in a sieve and cook it in a pot al dente. For the filling, mix the rice with the herbs, the tomato puree and the spices. Fill the courgette flowers carefully and tie them up with the chive. Put the filled courgette flowers in a pan with olive oil and put over the vegetable broth until they are barely covered. Let everything cook at middle heat for 15-20 minutes. You can serve the courgette flowers with yoghurt and decorate it with fresh green peppercorns
