Chocolate Chip Cookies

These Cookies taste so great…you can’t stop eating. In addition they are vegan and gluten-free! Happy bakery!

Ingredients (for 30 cookies):

  • 280 g walnuts
  • 140 g oat flour
  • 160 g oats
  • 3/4 tsp salt
  • 55 g coconut oil
  • 175 g sugar
  • 120 ml almond milk
  • 1 tsp vanilla extract
  • 130 g vegan bittersweet chocolate
  • 1 tsp baking powder

Preheat the oven to 175 degrees / 375 F and prepare a baking tray with baking paper. Mash 220g walnuts in a blender to walnut puree. Mix the oat flour with baking powder and salt. Then cream coconut oil, almond milk, sugar and vanilla extract. Add the dry ingredients and mix until you have a dough. Chop the chocolate and the remaining walnuts roughly and cream it together with the oats and the dough. Form little balls and bake them in the oven for about 10 minutes.
