Chocolate Banana Bread

What about tea-time? And in addition a wonderful chocolate banana bread? Here it is….healthy, delicious and vegan! Enjoy!

Ingredients (for 10-12 servings):
  • ¾ cup oat flour
  • ¼ cup almond flour
  • ½ cup cacao powder
  • 2½ tsp baking soda
  • ¼ tsp salt
  • 3 large bananas
  • ¼ cup apple sauce
  • ¼ cup coconut oil, melted
  • ¼ cup coconut sugar
  • 1 tsp vanilla
  • ½ cup walnuts, chopped (optional)

Preheat oven to 160C/325F and grease a loaf pan with coconut oil. In a medium bowl, mix together oat flour, almond flour, cacao powder, baking soda and salt. In a separate bowl mash the bananas. Add melted coconut oil and stir well. Then add coconut sugar, applesauce and vanilla. Add the dry ingredients to the wet and mix until just combined. Stir in chopped walnuts and pour the batter into the prepared pan. Bake for about an hour or until a toothpick comes out clean when inserted. Remove the banana bread from the oven and let stand in the pan for about 15 minutes. Remove from the pan and let cool for another 20 to 30 minutes on the cooling rack. After half an hour, slice the banana bread and enjoy. Store at room temperature for up to 3 days or refrigerate for 1 week.
