Carrot Cake Oatmeal

Another very fall inspired meal idea: Carrot cake oatmeal topped with mango-passionfruit-coconut yoghurt and some banana, raspberries, puffed quinoa and a kaki. Don’t be afraid to eat your oatmeal with veggies like carrots – just try it out! I assure you, it tastes amazing!

Ingredients (for 1 person):

  • 1 carrot
  • 1/2 cup oats
  • 1 tbsp chia seeds
  • 1/2 cup plant milk
  • 1/2 cup water
  • cinnamon to taste
  • sweetener like date syrup or agave to taste (I didn’t add any because of the yoghurt and fruit I topped everything)

Heat up the milk and water mixture on low heat until it starts to steam, then add the other ingredients. Let that simmer for about 10 minutes and make sure to stir occasionally. Serve when you have the desired consistency.
