Carrot Cake Muffins

Did you ever eat healthy, vegan and absolutely delicious muffins? Here we are…hope you’ll love my Carrot Cake Muffins like I do. This recipe makes about 12 medium size muffins. Have fun!
Dry ingredients:
  • 200 g oat flour
  • 30g pumpkin seeds
  • 20 g sunflower seeds
  • 30 g chopped walnuts
  • 1/2 tsp ginger powder
  • 1 tsp cinnamon powder
Wet ingredients:
  • 120g grated carrot
  • 120g grated apple
  • 1 chia egg (1 tbsp chia powder with 2 tbsp water)
  • 5 tbsp apple sauce unsweetened
  • 1 ripe banana (mashed)
  • 100 ml non-dairy milk (as much as you need to get a sticky dough)
  • 1/4 cup peanut butter
  • 1/3 cup maple syrup
Mix all the ingredients together in a large bowl. Pour the mixture into 10-12 muffin cases. Bake in the preheated oven at 180 C for 20-25 minutes.
