Buddha Bowl

Had this bowl with red lentil noodles, spinach, avocado, tomatoes and my favourite green veggie pasta sauce!

Ingredients:

2 Zucchini

1/2 can of chickpeas

11/2 avocados

1/2 can coconut milk

2 cups spinach

2 spring onions

Roast the onion with some coconut oil in an pan, then add about 1tsp of curry powder, some chili flakes and salt and pepper. Then throw in the zucchini and wait until it’s cooked through until you add the rest of the ingredients.
