Broccoli Rice Casserole

The Broccoli Rice Casserole is a very delicious and healthy dish with 10 ingredients and it’s very easy and quick done.

Ingredients (for 4 persons):

  • 2 1/2 cups vegetable broth
  • 1/4 cup nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 tsp curry
  • 1 can chickpeas, cooked
  • 2 cups fresh broccoli florets
  • 1/2 cups frozen peas
  • 1 cup uncooked brown rice

Preheat the oven to 180 degrees (400 F). Add the nutritional yeast to a medium pot and toast over medium heat for 2-3 minutes, stirring frequently. The yellow flakes will become darker and more fragrant. Then add the vegetable broth, turmeric, garlic, paprika and curry, raise the heat to high and bring the mixture to a boil. Meanwhile pour the chickpeas in a casserole dish, sprinkle the broccoli evenly over the chickpeas and the uncooked brown rice over the top of the dish. Put the vegetable broth with the spices over the casserole dish. Cover everything with aluminium foil and bake for 60 minutes. As side dish you can offer a mixed or just green salad. You can refrigerate leftovers for up to one week, or in the freezer for up to one month.
