Bircher Muesli

This speciality from Switzerland is a perfect breakfast, but you can serve it also as snack during the day. My Bircher Muesli is vegan, healthy and absolutely delicious…
Ingredients (for 2 persons):
  • 100g oats
  • 1 grated apple
  • 150g almond yoghurt (or any kind of vegan yoghurt)
  • 1 tbsp pumkin seeds
  • 2 tbsp raisins
  • 1 tbsp goji berries
  • 2 tbsp dried mangos (I just cut them into little pieces)

Mix everything together and place in the fridge overnight. This recipe is perfect for meal prep because you can keep the finished oatmeal in the fridge for up to 3-4 days.
